- Rice Pudding

Ingredients:

- 5 oz (150 grams) short grain rice
8 fl oz (250 ml) milk
5 oz (150 grams) caster or superfine sugar
1/4 pint (150 ml) double cream
2 oz (50 grams) candied citron peel, cut into pieces

- Directions:

- Cook the rice in a pan of boiling water for 10 minutes, then drain immediately.
Bring the milk to simmering point in a pan, add the rice and cook until all the milk has been absorbed.
Stir in the sugar, then remove the pan from the heat and leave to cool.
Stiffly whip the cream.
Fold the citron peel and the whipped cream into the rice.
Rinse out a ring mould with water, pour in the rice mixture and place in the freezer until the mixture becomes firm.
Turn out and serve. Serves 4.
